🥣 Ingredients (makes ~12 cookies)

    •    1 cup cottage cheese (low-fat or full-fat, blended smooth)

    •    1 egg

    •    1 tsp vanilla extract

    •    2–3 tbsp maple syrup or honey (to taste)

    •    1 cup oat flour (blend dry oats if you don’t have flour)

    •    ½ tsp baking powder

    •    ½ tsp cinnamon (optional)

    •    Pinch of salt

    •    ¼ cup dark chocolate chips

👩‍🍳 Instructions

    1.    Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

    2.    In a blender or food processor, blend cottage cheese until smooth and creamy.

    3.    In a bowl, whisk together blended cottage cheese, egg, vanilla, and maple syrup.

    4.    Stir in oat flour, baking powder, cinnamon, and salt until a soft dough forms.

    5.    Fold in chocolate chips (or blueberries).

    6.    Drop spoonfuls of dough onto the baking sheet, gently flattening each into a cookie shape.

    7.    Bake for 12–15 minutes until edges are golden.

    8.    Let cool for at least 5 minutes (they firm up as they cool).
